Chef Richard Hales Restaurants is a full service restaurant and hospitality consulting company that specializes in developing modern farm to table restaurants. The company was formed in 2008 and has set new standards for local eateries and hotel dining. Principal and chef, Richard Hales, brings not only exceptional culinary pedigree, but an intense set of SOP's, Training Program, Staff Guidelines, Financial P&L Oversight, Budget Creation and a guerrilla marketing plan that is not only effective, but affordable to implement. The company develops restaurant concepts that are based around farm to table, local, and sustainable cooking. Each restaurant has its own distinct identity which allows it to be unique to the market. Consistent professional training is the key to success for all our restaurants. The success of our restaurants are based on a high quality support staff of chefs, sous chefs, FOH managers, and devoted employees.
CHEF RICHARD HALES
Chef Richard is native to New Orleans, grew up in Florida and and honed his culinary chops in New York City. His culinary range began beyond his formal education and took shape while backpacking through Asia, Europe and South America learning, eating and discovering. Exotic Travel created culinary uniqueness as diverse as his background of Filipino, Irish & Italian heritage. Chef Richard has been a passionate pioneer of forward thinking concepts since 1991 and is only matched by the circle of professionals he has developed into his operations team.
As Owner, Culinary Director and concept creator for the group, Hales maintains creative control for the restaurants, hotel projects, catering and food truck operations.
Hales has appeared on Food Network’s Drive ins, Diners and dives, Guys Grocery Games, Beat Bobby Flay, Americas’s best bite, 24 hour layover with Anthony Bourdain, Fast Casual Nation, The great food truck race, The Daily Meal, Vivala, Eat street Canada, Cheddar TV, Extra Crispy, NBC The Feast, CBS 4, WSVN Channel 10. Hales appreared as himself in an independent film to be released October 2016 called "Whatever it takes". Radio appearances on Sirius XM radio and Y100. Hales has been nominated and awarded Top 50 Restaurant in America, Best Chinese Restaurant, Best Healthful Fast food, Top Food Truck in America, South Beach Wine & Food Festival Best Bite, South Florida Food 50, Chef of the Year and Restaurant of the Year.
Chef and his wife Jenny support personally or through their restaurants No Kid Hungry, Lotus House, St Jude's Hospital and Special Olympics.

GERSAIN NUNEZ brings an immense amount of operational experience to the group as Regional Operations Manager of RH Restaurant Group. As ROM Nunez oversees the day to day operations of restaurants, Hotel projects, catering and food truck operations. Nunez oversees strict budget compliance for all managed concepts.
NICOLE PERALTA oversees the administration functions of RH Restaurant Group and Chef Hales as Operations Manager. Peralta oversees SOP for FOH implementation and training. Peralta is lead manager on special functions and apperances.
CHYENNE GOMEZ is currently Kitchen Operations Director of RH Restaurant Group and oversees all kitchen, health and culinary operations within the group. Gomez is in charge of quality control, health requirements and recipe testing. Gomez oversees SOP for BOH implementation and training.
RACHAEL LOWE is consulting beverage director for RH Restaurant Group. Lowe is a Master candidate with the Court of Master Sommeliers. Lowe creates all menus, provides cost oversight and SOP Service and staff beverage training.
JENNY HALES is owner and provides financial oversight for the group and has extensive experience in real-estate finance. Jenny has over $3 billion of transactional experience across multiple accounts of equity and debt. Jenny oversees all reporting, payroll and employee HR.
KENNETH DAMAS, RH Restaurant Group Attorney leads the team in permitting, contract negotiations and site approvals.
